I’ve lost count of how many times someone has walked into Clever Polly’s and asked for a cappuccino or a flat white. It would probably break my heart if I’d kept track anyway. My Mum kept on saying when we were opening that we should get an espresso machine, that people expected it. Yes Mum, you were right on that count. And yet…
When we were opening Clever Polly’s, we always knew that we wanted to support small producer’s. That we wanted excellent quality, nutritious food, grown with respect for the land. But it wasn’t until I started putting the wine list together that I started to explore, and fall in love with, the world of natural wine. I still remember that moment, one of the first tastings that I had with a winemaker or distributor, in the kitchen of the house that we I was living in then.
On the 22nd of May 2016, Clever Polly's became an Omakase restaurant. This is a Japanese phrase that translates as “I’ll leave it up to you.” The idea is that you entrust our chefs to feed you, rather than ordering from a menu. They create a range of Japanese-style dishes depending on what’s good on the day and what’s inspired them.
Somewhere along the line, I fell in love with rose. There’s so much more to rose than just pink. For instance, there are so many different shades of pink in which it can come. And so many different flavours, from strawberries and cream right though to cherries, earth and spice.
